"Butterfinger" Bites

2 c. coconut
2 c. dried apples, peeled, cored and chopped
2/3 c. peanut butter
1 1/2 T. vanilla
2 c. dried apples, peeled, cored and chopped

In a large bowl, combine all ingredients; mix well. Shape into 1/2-1" balls. Dry in your dehydrator at 135º for 4 to 5 hours, or until firm and crisp on the outside.
Makes about 3 dozen.
Creamy Delicious Fudge
3 squares (1 C) bitter chocolate
3 tbsp. butter
1/3 C potato flakes + 1/3 C hot water
1/8 tsp. salt
1 tsp. vanilla
1 lb. confectioners' sugar
Melt chocolate and butter. Add potatoes, salt and vanilla. Mix. Blend in sugar. Whip until smooth. Press into 8-inch square pan. Let set.
Surprise Chocolate Fudge

2 C. black or pinto beans pureed in the food processor
1 C. baking cocoa
¾ C. butter or margarine, melted
1 T. vanilla extract
7 ½ C. powdered sugar
1 C. walnuts
In a microwave-safe dish, mash beans with a fork until smooth; cover and microwave for 1-1/2 minutes or until heated through. Add cocoa, butter and vanilla. (Mixture will be thick.) Slowly stir in sugar or use an electric mixer; add nuts. Press mixture into a 9-in. square pan coated with nonstick cooking spray. Cover and refrigerate until firm. Cut into 1-in. pieces.
