Pasta

 

Gnocchi



(Serves 2-3 as main, 4-6 as side)

1 C instant potato
1 C hot water
1 egg
1 C flour
2 T olive oil

1.      Mix instant potato and hot water.
2.      Add egg, flour, & olive oil and knead.
3.      Roll into a log (about finger thick) and cut off into bite sizes.
4.      Using a fork, press each gnocchi to flaten. 
5.      Roll the gnocchi on the smooth side to show the fork mark.
6.      Drop in boiling water.
7.      When the gnocchi floats to the surface, it’s all cooked.
8.  Serve with your favorite sauce.

Mediterranean Chicken Pasta

 
 
1 can chicken, drained
pasta (about 6 servings)
1 lg. can tomatoes, drained and diced
1 cup marinated artichoke hearts
2 T capers
to taste:  either garlic parmesan seasoning or garlic salt and parmesan
Combine all ingredients.
